Recipe (makes 12 balls)
Add all ingredients except the coconut or sesame seeds to a food processor.
Blend for a couple of minutes until you have a slightly chunky, sticky mixture — it should hold together when pressed, but not be completely smooth.
Tip the mixture onto a clean surface and roll into a sausage shape. Cut into 12 even pieces (around 17–21g each), then roll into balls.
Place the coconut and sesame seeds on separate plates. Roll each ball in your chosen coating, or leave plain if you prefer.
Store in an airtight container. They’ll keep happily for up to two weeks.
